Cutting Performance
This all-stainless, one-piece construction pairs a convex (hamaguri) double-bevel with molybdenum-alloyed cutlery stainless for a keen edge that enters smoothly and tracks straight.
The steel’s balance of hardness and toughness resists chipping while maintaining a light, low-drag feel through prep.
The blade face receives a food-release finish, helping potatoes, daikon, and other high-starch ingredients let go cleanly so your rhythm stays quick and steady.
