Seamless one-piece — hygienic, precise cutting for trimming, peeling, and garnishes.

Born from a traditional tool shop founded c. 1725 in Kyoto’s Shichijō-nishi—nearly 300 years with one belief:

“Deliver the real thing in kitchen tools.”

Every choice, from steel selection to heat treatment, grinding, and final hand-finishing, is made for daily ease of use.

The design is intentionally spare: clean, composed, and ready to serve as your everyday partner at the board.

Cutting Performance

This all-stainless, one-piece construction pairs a convex (hamaguri) double-bevel with molybdenum-alloyed cutlery stainless for a keen edge that enters smoothly and tracks straight.

The steel’s balance of hardness and toughness resists chipping while maintaining a light, low-drag feel through prep.

The blade face receives a food-release finish (subtle dimples or fine hairline), helping potatoes, daikon, and other high-starch ingredients let go cleanly so your rhythm stays quick and steady.

Made in Kyoto, Japan

Refined Kyoto sensibilities meet disciplined Japanese manufacturing. Specialists oversee each stage — heat treatment → grinding → hand truing — so precision in the details becomes comfort and control at the cutting board.
